Day Three… GETTING CREATIVE!!!!

Day Three! Getting Creative!
Day three.. we rushed out the door this morning and didn't give breakfast a second thought (a habit we need to change). After a morning swim, my mom and I were starving. Since we are thirty minutes from home we stopped to pick up cherries and natural mango juice. For lunch we chopped up eight hard-boiled edge and celery bits. We mixed them together with freshly grated sea salt, mayo, and a drop of mustard. We spread this mixture onto triscuits. The boys thought it looked disgusting and were sticking out their tongues as we dished them up, but they ended up enjoying it and asking for more :-)  Now we are pushing them out of their comfort zone, but they are doing well. We added natural sliced cheddar cheese on top of the triscuit/egg mixture which made it extra tasty. These were much more filling than we thought they would be. We also had apple slices and plain yogurt with homemade granola, blueberries, and strawberries on top. None of us like the plain yogurt and we replaced it with apple cinnamon greek yogurt. We always eat our meals with milk, my parents and I drink Skim and my brothers still drink Vitamin D. They need the extra fat (don't we all wish we had this problem?) 

We were all going different places today so we snacked on grapes, water, Sobe Lifewater, and Lara bars while on the go. At any given time on any given day if my brothers were asked what they wanted to eat it will ALWAYS be mac-n-cheese. You would think the world is ending when there is only one box of mac-n-cheese left in the pantry. 

100 days of real food website has a recipe for whole-wheat homemade mac-n-cheese. For supper we felt like we had to give it a shot because the boys were likely to be going through a withdrawal. We used Barilla whole grain elbow noodles and doubled the recipe that included whole wheat flour, milk, unsalted butter, and we shredded our own natural sharp white cheddar cheese. We also served triscuits with original hummus spread, steamed carrots, cauliflower, broccoli, and the hit of the night... fresh fruit kabobs. When Trey first saw the kabob assembled he said "Oh that's sweet!" Who knew a simple two cent wood stick would make fruit appear so appealing. The fresh fruit kabob included bananas, grapes, strawberries, pineapple, and cantaloupe. Trey loved it so much he ate two and Ty also finished his and recycled his by restocking the skewer with his steamed vegetables. And the best and most surprising news of today was not a single complaint about the new healthy mac-n-cheese and both the boys asked for a second helping. Much to our surprise, nobody asked for dessert today. 

Unfortunately we were not able to make homemade pop tarts because we don't have a food processor. We plan to borrow one this weekend. And we hope to make homemade granola bars this weekend. Both items will help with our busy mornings on the go. 

For a snack tonight we ate homemade granola with fresh strawberries and blueberries, a handful of raisons, and a glass of water. 

Challenges/Thoughts for today
We do not feel hungry and all of us feel satisfied throughout the day. We all snack less than we did before. My mom has cut way back with coffee because "it just isn't the same without coffeemate." My dad does not believe that we are getting enough protein, so we will think into that topic a little more. Overall we had a very successful day. There was a small talk about Pizza Hut pizza and how much we miss it!  We need to find a good, healthy pizza recipe! And a little word of advice... if you ever decide to try this challenge, try to plan your meals at least a day in advance according to your activities the next day because somethings take longer to make than others and always have a back up plan because if your house is anything like ours, plans ALWAYS change!

  1. I think you are getting a lot of protein, even for athletes. Add up the protein in everything you ate yesterday - the eggs, hummus, pasta, yogurt, even the Lara bars. I'm sure you are well in line, read here: http://www.cdc.gov/nutrition/everyone/basics/protein.html
