DAY TWO! A few challenges, but overall a success!

Day two was a very busy day for our family but we made it through without caving for any fast food or unhealthy snacks. I need to get better at eating a more complete breakfast. I was in a hurry this morning, so I grabbed a bag of grapes on the way out to open gym. I wish I would have eaten something more filling because of the amount of energy that I used at open gym. For lunch we made chicken fajitas. We marinated the chicken in a fajita seasoning from Penzeys spices with corn oil, lime juice, and a little water. We sliced up red and green bell peppers and an onion and served them on whole wheat tortillas with sour cream, lettuce, and shredded natural monterey jack cheese. For sides we had pineapple, grapes, and corn on the cob (with unsalted butter). The boys were a little fussy about the peppers and onions but did eat the rest of the fajita. They of course ate the corn on the cob and did not notice the change of non salted butter. Our family is frequently guilty of having desserts after most suppers (small bowl of ice-cream or yogurt with milk chocolate chips). Not many meals go by that Trey doesn't ask what is for dessert before he begins eating his supper. The Lara bars have given all of us the little taste of chocolate that we think we need everyday. We have let the boys have one to two a day to replace their frequent trips to the pantry for fruit snacks. Another popular snack for all of us are hard boiled eggs, bananas, triscuits with hummus, grapes, and lots of water. Unlike most kids, Ty prefers the yolk part of the hard boiled eggs and doesn't like the white part. 


We were faced with difficult challenges today. Trey went to a local community event that served cookies as a snack and hot dogs for the meal. He knew better but could not resist so he felt better by taking the smallest of all the cookies. Then we showed up and saved him from hot dogs, potato chips, and juice and brought him home for supper. We were faced with the same trouble when snacks were given out after Trey's baseball game. We also made the mistake of going into the gas station with a very hungry Ty and he was very mad when he figured out he could not have anything from the candy aisle. We left with a water, milk, and pumpkin seeds. Tytan (age four) was also offered a hershey kiss from a friend and he had to sadly decline by saying he can't eat that for ten days. Now my job is to figure out how to make my brothers feel like this 10 day challenge is not torturing them but rather to help them learn about good food choices. 
This is our THIRD container of grapes this size in 2 days! My mom said she is thankful they are on sale.

A must have in every house with little people. The boys always want a quick drink when they come in from outside. Instead of going through loads of bottled water or having to help them get a cup and watch them spill water everywhere, we have these handy reusable bottles that slide nicely into the fridge.  They were mine years ago and the boys go through  all 5 everyday. We just keep washing and refilling and they are staying hydrated.  Plus, it's self serving...bonus! 

These handy fruit/veggie storage containers have been my mom's favorite for several months. She found hers at a specialty cooking store but has since seen them in many local stores. They really do preserve the fruit/veggies longer and have vents and a little guide as to which fruits needs to be vented or not. 
For supper we had grilled cheese sandwiches, red potato skin-on fries on the grill, grapes, and hard boiled eggs with sea salt. The cheese was natural american cheese that we sliced from a block on whole wheat bread spread with all natural butter with olive oil. The sliced potatoes were fresh red potatoes tossed in olive oil, grilled for 20 minutes, and seasoned with all natural seasoned salt from Tastefully Simple. This is the first time we have ever made grilled cheese on whole wheat bread with non-processed cheese and there was not a single complaint. For a snack tonight, the we all had plain yogurt with fresh fruit. I would consider day 2 a success. We have our meals planned out for tomorrow and plan to made homemade pop tarts!
